"What grind size should I use? How much beans should I use?  How much should I extract? "


People often ask us for our recommendations when they embark on their brewing journey. However, most often people are unaware that there are other crucial factors such as water quality and types of grinders that play a bigger part in our resulting espresso. Hence, our recommendations should serve as a starting guide and we advise to adjust accordingly to find a recipe that suits you.

Espresso

Start with knowing what your basket size is! Basket is what catches your grounds in your portafilter. Remove the basket from your portafilter and the size is usually indicated on it. 

 

  • Dose in : Dose out

We generally use a 1 : 2 ratio in our cafe. This means if our basket is 18g, we will use 18g in and extract 36g of espresso out.

  • A general extraction time should occur between 25 seconds to 30 seconds.


V60

Depending on the coffee, we generally brew with 1 : 16 coffee ratio using 15g to brew 250g of coffee. 


Bloom the first pour to 60g for 30 seconds, and then subsequently to 120g and lastly 250g. The brew should be completed by 2m30s.  


You may grind the beans finer if you find your brew flowing too fast. Similarly, if it flows too slow, you may grind it coarser. Most importantly, experiment, have fun, and enjoy your brew!
